A state of the art kitchen
This September, the kitchen at The Ritz London will re-open following a major refurbishment. The new space will use induction throughout, making it far more energy efficient, space efficient, cooler and more economical to run. Much cooking will be done on planchas, minimising the need for fats and oils, and for the many pots and pans of traditional kitchens. The new layout has been designed with workflow in mind: there will be a separate area for stock and large production, a section solely for breakfast and staff food, and under-counter fridges for all cold preparation areas. Individual tasks will be easier to negotiate benefiting the busy space that services the Restaurant, The Rivoli Bar, The Palm Court and Room Service.
